1 cup fresh orange juice

1 clove garlic, minced

1 tablespoon tamari
1 tablespoon coconut aminos
1 tablespoon honey or maple syrup
½ teaspoon red pepper flakes (optional, for heat)
2 teaspoons salt (to taste; using Natural Redmond Real Salt)
2 teaspoons freshly ground black pepper (to taste)
For Snap Peas:
Fresh:
1 pound fresh snap peas, trimmed
2 cloves garlic, minced
Staple:
1 tablespoon olive oil
1 tablespoon tamari
1 teaspoon sesame seeds
¼ teaspoon red pepper flakes (optional, for heat)
1 teaspoon salt (to taste; using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper, to taste

1. Coat the chicken pieces evenly with salt, pepper, and arrowroot powder.
2. Heat the tallow in a large skillet over medium-high heat.
3. Add the chicken to the skillet and cook until golden and thoroughly cooked (5–7 minutes).
4. Remove chicken from skillet and set aside.
5. In a small bowl, combine orange zest, orange juice, tamari, coconut aminos, honey, garlic, ginger, salt, pepper and chili flakes.
6. Pour orange juice mixture into the same skillet and bring to a simmer. Add the arrowroot slurry (1–2 teaspoons powder mixed with equal parts water) and stir until sauce thickens, about 1–2 minutes.
7. Return chicken to skillet, coat evenly with sauce, and cook 1–2 minutes until heated through.
8. Garnish with green onions and sesame seeds.
For the Snap Peas:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic and sauté for 30 seconds until fragrant.
3. Add the snap peas and stir-fry for 2–3 minutes until crisp-tender.
4. Add tamari, sesame seeds, and red pepper flakes.Stir to coat evenly and cook for another minute.
5. Remove from heat, sprinkle with additional sesame seeds if desired, and season with salt and pepper to taste. Serve warm.
