1-pound grass-fed ground beef
1 large yellow onion, diced
8 ounces mushrooms (organic), diced
1 cup cherry tomatoes, diced
2 cups kale, chopped
1 large jar of marinara sauce (Rao’s recommended)
1 package of Miracle noodles (shirataki noodles)
2 tablespoons fresh basil, chopped (for recipe and topping)
2 tablespoons fresh thyme, chopped
Parmesan cheese, grated (for topping)
Staple:
2 tablespoons grass-fed butter
2 teaspoons garlic powder
1 teaspoon salt (to taste; using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper (to taste)

Print Recipe- In a skillet over medium-high heat, melt grass-fed butter. Add diced onion and sauté until it reaches a golden brown, around 3 to 4 minutes.
- Meanwhile, if not already done, chop tomatoes and organic mushrooms. Add these to the skillet; let them cook in the heat for an additional 3 to 5 minutes.
- Season this aromatic mix with fresh basil, thyme, garlic powder, salt, and pepper; stir and let cook for an extra 1 to 2 minutes.
- Now, introduce the grass-fed ground beef into the skillet. Cook for 5 to 8 minutes, breaking up the beef as it browns.
- Stir in the marinara sauce; allow it to simmer for 10 to 15 minutes, letting all the flavors harmonize.
- Next, drain and rinse the Miracle noodles for about 1 minute over the sink (this will neutralize any strong odors). Then, let them boil in a small pot of boiling water for 2-3 minutes and drain them.
- Chop the kale and add it to the sauce. Once the kale wilts, remove it from the heat.
- Serve the Bolognese sauce over the Miracle noodles, top with a generous sprinkle of freshly grated Parmesan cheese.
