Ingredients
For Lettuce Wraps:
Fresh:
1 pound grass-fed ground beef
3 garlic cloves, minced
1 small onion, diced
1 cup shredded carrots
1 cup finely chopped mushrooms
1 cup diced water chestnuts
1/2 cup finely chopped broccoli florets
1 teaspoon freshly grated ginger
1 head butter lettuce or romaine, leaves separated
Juice of one lime
Green onions, for garnish
Staple:
2 tablespoons avocado oil
2 tablespoons tamari
1 teaspoon sesame oil
1 tablespoon homemade hoisin sauce = mix equal parts coconut aminos, almond butter, and rice vinegar (teaspoon of each)
1/4 teaspoon red pepper flakes (optional)
1 teaspoon salt (using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper
For Edamame:
Fresh:
1 pound frozen shelled edamame
2 garlic cloves, minced
Staple:
1 tablespoon sesame oil
1 tablespoon tamari
1/4 teaspoon salt (using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper
Sesame seeds, for garnish

Print RecipeCook the Ground Beef:
1. Heat a large skillet over medium-high heat. Add avocado oil and ground beef. Cook until browned, breaking it apart with a spoon(about 5 minutes).
2. Season lightly with salt and pepper and set beef aside.
Sauté the Veggies:
3. In the same skillet, add avocado oil and sauté onion and garlic until fragrant, about 2 minutes.
4. Add carrots, mushrooms, broccoli, and water chestnuts. Cook for 5-7 minutes, stirring occasionally, until tender-crisp.
Prepare Edamame:
5. Meanwhile, heat sesame oil in a small saucepan over medium-high heat. Add garlic and edamame, cooking until warmed through but still bright green, about 2 minutes.
6. Stir in tamari and cook until liquid evaporates, about 1 minute. Remove from heat, season with salt, sprinkle with sesame seeds, and keep warm.
Combine and Season:
7. Return the beef to the skillet with vegetables.Add tamari sauce, sesame oil, homemade hoisin sauce, rice vinegar, grated ginger, fresh garlic, salt, pepper and red pepper flakes.
8. Cook for 2-3 minutes to blend flavors.
9. Finish with fresh lime juice and stir to combine.
Assemble the Wraps:
10. Spoon the beef and vegetable mixture into lettuce cups. Garnish with green onions and sesame seeds, serving with a spoonful of edamame.
