Ingredients

Fresh:

4 boneless, skinless chicken breasts

1 pint cherry tomatoes, halved

1 cup fresh baby spinach leaves

1 cup chopped red onion

1-2 cups shredded mozzarella cheese

½ cup chopped fresh basil

2 tablespoons melted coconut oil

1 tablespoon extra-virgin olive oil

2 teaspoons salt (to taste; using Natural Redmond Real Salt)

2 teaspoons freshly ground black pepper (to taste)

1 teaspoon dried basil

2 teaspoons dried oregano

1 tablespoon smoked paprika

2 teaspoons garlic powder

1 tablespoon balsamic vinegar

Red pepper flakes (for topping)

Balsamic glaze (for topping)

  1. Preheat your oven to 425°F and generously grease a large baking dish with melted coconut oil.
  2. In a plastic zip-lock bag, place the chicken breasts and use a sturdy kitchen utensil to achieve an even thickness.
  3. Transfer the chicken to the prepared baking dish and season it with oregano, smoked paprika, dried basil, salt, and pepper.
  4. Bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. While the chicken is baking, finely chop the tomatoes, red onion, and basil. Combine these with olive oil, balsamic vinegar, salt, and pepper in a mixing bowl.
  6. Once the chicken is done, take it out of the oven and generously top it with shredded Mozzarella cheese, fresh spinach, and the prepared tomato mixture.
  7. Return the baking dish to the oven for an additional 5-8 minutes, or until the cheese turns golden-brown, and the tomatoes have softened.
  8. Remove the chicken from the oven and finish it with a sprinkle red pepper flakes and a drizzle of balsamic glaze before serving.
