1 cup fresh baby spinach leaves
1 cup chopped red onion
1-2 cups shredded mozzarella cheese
½ cup chopped fresh basil

Print Recipe- Preheat your oven to 425°F and generously grease a large baking dish with melted coconut oil.
- In a plastic zip-lock bag, place the chicken breasts and use a sturdy kitchen utensil to achieve an even thickness.
- Transfer the chicken to the prepared baking dish and season it with oregano, smoked paprika, dried basil, salt, and pepper.
- Bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F.
- While the chicken is baking, finely chop the tomatoes, red onion, and basil. Combine these with olive oil, balsamic vinegar, salt, and pepper in a mixing bowl.
