Fresh:
2 cups ham, chopped
1 egg, fried
1 medium sweet potato, shredded
1 pound Brussel sprouts, shredded
1 onion, diced
3-4 garlic cloves, minced
Green onions, chopped (for topping)

3 tablespoon avocado oil
2 teaspoon salt (to taste; using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper (to taste)

Print Recipe- Preheat the oven to 425°F.
- Shred the sweet potato and Brussels sprouts using a grater or food processor if not done already. Also, chop the garlic.
- Spread sweet potatoes, Brussels sprouts, onions, ham, and garlic evenly on a baking sheet lined with optional unbleached parchment paper for easy cleanup. Drizzle with avocado oil, sprinkle salt and pepper, then toss everything together using your hands. Spray the top with Avocado oil cooking spray.
- Roast for 20 to 25 minutes until the vegetables develop crispy, caramelized bits.
- While the hash is in the oven, heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Once hot, crack the egg into the skillet. Season with salt and pepper to taste and cook for 1 to 2 minutes. Flip the egg and cook for an additional 30 seconds to 1 minute, depending on your desired level of doneness.
- Serve the ham hash topped with the fried egg and a sprinkle of chopped green onions.
