1 pound large shrimp, peeled and deveined
4 bacon slices, cut into thirds
2 garlic cloves, minced

1 bunch organic collard greens, washed and chopped
½ medium sweet onion, thinly sliced
2 garlic cloves, minced

½ teaspoon red pepper flakes (adjust to taste)
1 tablespoon apple cider vinegar
1 teaspoon salt (to taste; using Natural Redmond Real Salt)
1 teaspoon freshly ground black pepper (to taste)

Print Recipe1. Preheat oven to 400°F and soak wooden toothpicks in water.
2. Line a baking dish with unbleached parchment paper for easy cleanup (optional).
3. In a small bowl, combine avocado oil, minced garlic, Dijon mustard, honey, and chipotle powder.
4. Cut bacon slices into thirds if not already done.
5. Season shrimp with salt and pepper.
6. Wrap each shrimp with a bacon third, secure with a soaked toothpick, and place on the baking sheet.
7. Brush bacon-wrapped shrimp with the garlic-Dijon mixture, reserving some sauce for serving.
8. Bake for 12-15 minutes until bacon is crispy and shrimp are cooked through.
9. Meanwhile, remove tough stems from collard greens and slice leaves into thin strips.
10. Heat avocado oil in a large skillet over medium heat.
