Directions
Print Recipe- Preheat your oven to 375°F.
- Marinate the beef: Slice the beef into cubes and place it in a glass baking dish. Combine avocado oil, garlic, lemon juice, tamari, Worcestershire sauce, hot sauce, onion powder, dried basil, salt, and pepper with the beef. Stir well and set aside for 15 minutes.
- Prepare veggies: Slice the bell pepper, red onion, and zucchini if not already done.
- Create the cucumber salad: Slice the cucumber and radishes and add them to a large bowl.
- Skewer the kabobs: Thread the marinated meat cubes onto skewers, alternating with sliced veggies (zucchini, mushroom, bell pepper, and red onion). Place the loaded skewers on a baking sheet, optionally lined with parchment paper. Spray with avocado oil cooking spray and season with salt and pepper.
- Bake the kabobs: In the oven for about 30 minutes or until the beef reaches an internal temperature of 140°F to 145°F.
- Complete the cucumber salad: Add cilantro, olive oil, lime juice, salt, and pepper to the bowl with the cucumbers and radishes. Stir to combine.
- Serve in style: Present the gourmet beef kabobs alongside the fresh and zesty cucumber salad.
