Ingredients

For Chicken:

Fresh:

4 boneless, skinless chicken breasts

8 slices thinly sliced ham

4 slices Swiss cheese

‍Staple:

Avocado oil spray

2 cups super-fine natural almond flour

1 tablespoon avocado oil mayonnaise (Primal Kitchen recommended)

2 tablespoons brown or Dijon mustard (Primal Kitchen recommended)

1 teaspoon salt (to taste; using Natural Redmond Real Salt)

1 teaspoon freshly ground black pepper (to taste)

For Asparagus:

Fresh:

1 pound asparagus 

‍Staple:

1 tablespoon avocado oil

½ teaspoon salt (to taste; using Natural Redmond Real Salt)

½ teaspoon freshly ground black pepper (to taste)

  1. Preheat your oven to 425°F.
  2. Line a baking dish with a wire rack, generously spraying it with avocado oil.
  3. In a small bowl, blend together mayonnaise and brown mustard until well combined.
  4. Season both sides of the chicken breasts with salt and pepper. Brush each breast with the mayo-mustard mixture, then coat with almond flour. Arrange the coated chicken breasts on the prepared wire rack and give the tops a light spray of avocado oil.
  5. Prepare the asparagus by trimming off tough ends and placing them on a baking sheet optionally lined with unbleached parchment paper.
  6. Toss the asparagus with avocado oil, salt, and pepper to taste, ensuring a thorough coating. Roast in the oven alongside the chicken for 18 minutes or until tender yet crisp.
  7. Bake the chicken, uncovered, for 25-30 minutes or until the thickest part reaches 165 degrees.
  8. After 15-18 minutes, remove the asparagus and keep it warm.
  9. Take the chicken out of the oven and crown each breast with two slices of ham and a slice of Swiss cheese.
  10. Return the chicken to the hot oven for 2-3 minutes, allowing the cheese to melt.
  11. Serve each Chicken Cordon Bleu alongside the roasted asparagus for a delightful and wholesome meal.
