- Line a baking dish with a wire rack, generously spraying it with avocado oil.
- In a small bowl, blend together mayonnaise and brown mustard until well combined.
- Season both sides of the chicken breasts with salt and pepper. Brush each breast with the mayo-mustard mixture, then coat with almond flour. Arrange the coated chicken breasts on the prepared wire rack and give the tops a light spray of avocado oil.
- Prepare the asparagus by trimming off tough ends and placing them on a baking sheet optionally lined with unbleached parchment paper.
- Toss the asparagus with avocado oil, salt, and pepper to taste, ensuring a thorough coating. Roast in the oven alongside the chicken for 18 minutes or until tender yet crisp.
- Bake the chicken, uncovered, for 25-30 minutes or until the thickest part reaches 165 degrees.
- After 15-18 minutes, remove the asparagus and keep it warm.
- Take the chicken out of the oven and crown each breast with two slices of ham and a slice of Swiss cheese.
- Return the chicken to the hot oven for 2-3 minutes, allowing the cheese to melt.
