Directions
Print RecipeBefore You Start: Quick-Soak the Cashews:
1. Place the cashews in a bowl.
2. Cover them with boiling water and let them sit for 10–15 minutes while you prepare the other ingredients. This quick-soak softens the cashews, making them easier to blend and yielding a smooth, creamy texture.
3. Drain before using.
Cook the Mushrooms (Approx. 8 minutes):
4. Heat the olive oil and butter in a large pot over medium heat.
5. Add the sliced mushrooms, seasoning with a pinch of salt and pepper.
6. Sauté for about 8 minutes, stirring occasionally, until the mushrooms release moisture and begin to brown.
Sauté Onions, Shallots & Garlic (Approx. 3–4 minutes):
7. Stir in the onion and shallots, cooking for 2–3minutes until softened.
8. Add the garlic and cook for an additional 30seconds, being careful not to burn it.
9. Sprinkle in the dried thyme, stirring to combine.
Add Broth & Simmer (Approx. 10 minutes):
10. Pour in the bone broth and bring to a gentle boil over medium-high heat.
11. Reduce heat to medium-low and let it simmer for 10 minutes to deepen the flavors.
12. Meanwhile, drain the cashews.
Blend for a Creamy Texture:
13. Carefully transfer about 2 cups of the soup (including some mushrooms) to a blender.
14. Add the drained cashews and miso.
15. Blend on high until very smooth (about 30-60 seconds).
a. If you prefer a fully puréed soup, blend more of the mixture, or use an immersion blender directly in the pot.
16. Return the blended mixture to the pot, stirring well to incorporate.
a. Tip: Avoid boiling the miso to preserve its beneficial probiotics-blending it separately prevents this.
Add Spinach & Thicken (Approx. 5–8 minutes):
17. Stir in the chopped spinach, allowing it to wilt for 1–2 minutes.
18. If the soup is too thin, stir in the arrowroot slurry and let it cook for another1–2 minutes until thickened.
19. If the soup is too thick, add a splash of broth or water to reach your desired consistency.
Serve:
20. Ladle the soup into bowls.
21. Garnish with chopped parsley, if desired.
